Best way to convert Bluray --> MKV / MP4?

I'm looking to convert my blurays to something that my PC, TV and PS3 can play...

If I go "Bluray image" --> MKV (MakeMKV)

That results in a uncompressed MKV with DTS (lossy) soundtrack without subtitles?

How can I then shrink down and place within a MP4/M4V and/or replace the DTS with a Dolby 5.1 (i.e. AC3) soundtrack? I take it it is not possible to retain a TrueHD soundtrack as very few devices support it?
 
One of the easiest options is to use DVDfab.

It's fantastic at Bluray ripping and even Bluray to DVD.

I can be a bit pricey but for converting Bluray to MKV or MP4 it is really simple to use and very fast.

The file size will depend on what you are looking for, as an example you can convert to 1280x720 with 5.1 and the file will be around the 4Gb mark, or if you want full 1920x1080 you are looking around 8Gb.
 
U say u have a ps3. Why dont u just use dat 2 play ure bluerays?

Don't bother buying anything for transcoding**. Install handbrake, select source, select output, profile and check the output format, audio track and subs.. Wait*. There are others of course, but handbreak has present profiles which require zero knowledge to use. High does exactly what it says.

*N.B.* Instead of starting you can add to queue and set it to close/shutdown when done. Useful Makes overnight encoding of multiple movies painless.

**Actually there are a couple paid apps that make use of sandys quick sync commands. Never used them but they're a lot faster than even cuda (which you should avoid for any type of video transcoding).

Converting to MKV with MakeMKV seems to produce a video that doesn't play properly in windows with Shark007 codecs? It's a little stuttery and the sound is hissing...

Converting the bluray direct in handbrake seems ok but there appears to be no way to convert the DTS soundtrack to a compatible 5.1 source?

Also, handbrake seems to want to convert any 1080p bluray to an anamorphic screensize... is there any point doing this or should I set the resolution to 1080p manually?
 
Ok, works as a MKV - just not as a MP4 (evidently as this is not exactly a supported combination?)

So is there no way to get AC3 5.1 within a MP4 container?

Any preference on the anamorphic setting?
