Right, im looking at going to ireland next month and trying to find cheap flights, prefered dates would be on the weekend and prefered airports would be from luton/stanstead/heathrow to derry (return)

Ryanair is pretty much your only option for that route. They fly Stansted + Luton to Derry on a regular basis.
