I'm confused as well - why not just drive from Gatwick to Norfolk? Gatwick isn't anywhere near central London. M23->M25-> Dartford->A12->A140 is a fairly straight forward and I reckon a lot quicker than getting the train. Make sure you know how you're going to pay the Dartford charge. That's one nasty commute to do every day though.
Trains go from St Pancras to Gatwick direct so anywhere on the line into that, alternatively (and probably closer to Norwich) anywhere on the east coast mainline. How about driving to Cambridge, getting the fast train to London and then swapping stations (next door to each other) to St Pancras and getting the next train to Gatwick.
Probably the best option of you don't want to drive. This is a prime example of why Gatwick should never have become a major airport!
