Best way to transfer everything to a new build?

Basically I've bought all the components to replace 90% of the ones in my current build and one includes a 500gb sata2 drive. I currently have 2 IDE drives holding all my things like emails, mp3's, pictures, settings etc that i really dont want to lose. Whats the best way of getting everything off those and onto my new drive?

By the way I'll be going from XP Pro to Vista Ultimate.

As long as you've got an IDE capability on your new mobo, I'd plug your old drives into your new rig and transfer everything across. Vista has a handyish utility to transfer settings and files and stuff, although I only used it for outlook express so I don't know what it's like for other programs.
 
My new board doesn't have ide compatibility, just 4 sata2 slots, whats my best bet then, to use an external hdd enclosure somehow?
