Best way to utilize drives

I plan to buy a 2TB m.2 SSD but my current setup is below. What is the best way to use all drives when I get the 2TB SSD?

120GB SSD - Windows only (plus few files and programs that never installed to the 500GB) - 24GB free
500GB SSD - Programs and User files - 153GB free
1TB SSD - Games - 35GB free
 
Should have specified, all current are SATA, new 2TB will be m.2 NVME.

I do plan to reinstall Windows, which will mean reinstall all programs too.
 
120 GB one is simply such small (+likely old and slower) that just wouldn't bother with keeping it in PC.
(though you could reuse it with USB HDD dock)
500 GB is also somewhat smallish, but if case has room for it could keep it.

What motherboard you have?
Especially older boards, but also newer lower end chipset boards can have limitations what drive types their M.2 slots support.
 
I have a MSI B450 Gaming Plus Max with a Ryzen 5 3600.

Do I need to continue separating my user folders on a different drive? I mainly did it in the event of drive failure but I also have a backup that runs to backup my User folders.

Crystal Disk Info shows 100% health with 1373 power on count and 4435 power on hours. The 1TB is the same as they were purchased together (Both 860 EVO).
 
I'd do a new windows install on the NVME drive as it will be faster.

The good thing about SSDs are they are small and light compared to HDDs so you can have quite a lot floating about in your case. Typically limited by SATA ports rather than physical space.

120GB SSD would be useful to stick in an older system as boot drive that doesn't have an SSD. Perfect size for a Windows drive (my son has a 60GB drive, and it's a bit annoying with it periodically getting near full with like temp files from driver downloads and whatnot).
