BF3 install, am i reading this correctly...

Lots of patching is a bad thing how? I'd rather have lots of small incremental patches that fix things regularly over one that takes ages to come out and is huge in size.

Ideally you'd not want any bugs but purely performance/feature updates. However for a game such as Skyrim to fix every bug before release would be impossible due to the crazy number options in gameplay.

You must be new to the Battlefield series :D

Yeah pretty much, only played a bit of BC2.

Given any kind of software it's hard, Skyrim isn't alone in that just because it's got many scenarios and paths.

I think an expectation to have 100% bug coverage in a reasonably big game let alone a a large AAA title with a complex, near bespoke engine is completely unrealistic.

Bugs don't just have to be visible things that the player can see with his own eyes. It's not all "go her, do this, observe issue" when finding issues, and games are many fold more complex today, than they were even a few years ago. :p
