Do you know what your CPU usage is?
Try overclocking it some more, also overclock the CPU-NB to 2600 / 2800 Mhz if you can. see if that helps.

Create a user.cfg (save as all files not a txt file) file and place it in the battlefield 3 main folder.
Copy and paste these commands in the config.

Did you check in the in game console that they were applied.
I've just ordered 8gb of ram would that help at all? Replacing my 4gb I have at the moHit the ` key, then type RenderDevice or part of it and you can hit Tab to auto complete, then you start typing ForceRenderAheadLimit or part of it and you can hit Tab to auto complete that part as well, if you then hit Enter without adding a numerical value, it well tell you the current running numerical value.
Do that for all 4 one at a time.

To rule out vram issues try running your crossfire cards at the same settings that you were using when you played BF3 with a single card. If you don't get any more lag spikes/FPS drops then start turning up some of the settings one by one until you get the same issue then roll it back to the previous setting for optimal balance between IQ and performance.
Running BF3 with the MSI afterburner overlay would help as well (shows you GPU statistics).
If your CPU usage is at 98% then there's nothing you can do I'm afraid. If you're willing to upgrade an i5 is your best value option.
Get more system ram.
4GB system ram is not enough for crossfire. You are getting lag spikes because of HDD caching.
I'm getting lag spikes mainly because of my cpu bottleneck as ive seen using msi afterburner. I just need to know if a 1055t would be sufficent
