Bigger monitor or eyefinity/3d surround?

would it be better to get another two monitors and run 3d surround/ eyefinity, or get a bigger monitor?

i'm upgrading my gpu, I was just wondering what would be better as it would help me pick out of the gtx 480 or the amd 6950

What is the difference between ips and something like LCD or led?
