Bigger size/resolution or ultrawide?

Is the smaller vertical resolution worth it for the ultrawide?

depends what you're using it for.
I'd say 1080p or 1440p are still the sweet spot.
Unless there's some reason you need more, e.g. video editing or something.

Yeah I look at a lot of charts and have a lot of windows I want up at the same time.

There's also a question of bigger monitor vs multiple smaller monitors.
Then it's basically personal preference..
