Bike stolen - what to replace it with?

Last week, my Cube Cross Race was stolen, so I am looking to replace it.

90% of my riding is on tarmac. I do have to hop over quite a few tram lines, and the odd (fairly well surfaced) gravel forest track in the winter - nothing too serious, very much "light" gravel at worst.
So I'd consider a road bike with fatter tyres, another Cyclocross bike, or maybe a Gravel bike. Having tried all 3 types of bike here, none feels like a huge compromise.

Key point - NO MATT BLACK FRAMES, if I have to look at another matt/satin black bike I'll probably puke.
I want something bright that stands out - a Bianchi, a Cinelli, a bright Canyon, that sort of thing.

Budget is €1500 - €2500 and I'd prefer to get a carbon frame in that budget if I can. Disc brakes are also a must for me having had them on the Cube.
Or do I ignore the carbon element and just get something I love the look of like this?

You're going to push to find anything meaningful from those brands (except Canyon) for that budget. Unless you treat it as a frame foundation (ie, most of the cost is in the frame allowing you to make useful upgrades to other components as time and finances allow)
 
TBH - and I know this may seem a bit mad, I've always used entry level groupsets and stuff. I'm not a regular framechanger, 2 frames in 12 years so I'd rather get a frame I really like and fiddle about with peripherals over time.
 
If you're not set on carbon and don't mind a cross bike again the Virus Energie (Apex) is a good shout. Reduced to £900 on Wiggle at the moment and comes in a beautiful mango colour.
 
I'm considering an Inflite at the moment but I'll have to wait until next summer (!) to get it

 
Boardman ADV9.0 or 9.4 perhaps. I have both and love them hence why I got another. Inflite is quite a compromised bike and I wouldn't recommend for riding on the roads. Its skittish and agile as thats what it's designed to be.
