Bios Default setting,?

ok, so I got a

Asus TUF Gaming B650-Plus WIFI (Socket AM5) DDR5 ATX Motherboard my hard drive contained a dual boot set up ( linux mint & windows 10 )​

from the get go i've hit problem's in that it would not recognise the dual boot and booted straight into Window's did some setting changes in bios boot section with the assistance
of OC techline to advise me but basically same result's. then I tried further setting's with the result that the boot screen goes to boot screen where I would normally see top left
my boot choices in the past I would see.... top and first linux middle and 2nd linux safe mode...and bottom and 3rd windows, However the print is tiny ( so much I cannot read it,!! )
I have tried going down 2 with direction key's but whatever I do it goes into linux,??? SO the question is...... when I tell bios to use Default setting's does it return everything to the
way it was when I opened the box to install, and would my

Gigabyte Radeon RX 7700 XT Gaming 12GB GDDR6 PCI-Express Graphics Card be making the start screen tiny,?? should I remove the GPU and use the boards built in graphic's to begin with,?? cheer's ( any EXPERT's live in Doncaster and wish to earn a few ££ ;)

 
Already ordered a new ssd from OC as that was/is the plan, I wanted to boot back into it to get a back up of email and game save data for a new install, my game's are on another drive but think the steam and ubisoft gamesaves were on window's,!! suppose I could drag all files from it with linux then delete new install fies and replace them,?
