Bios+OS Resolution Problem (i5 2500k and asus p8z68-v)

Hi Tech Heads!

I would really appreciate some help with my new cpu+mobo combo please.

Going into the bios sets the monitor to 640x480 but the edges of the screen to the right and the bottom are not visable. In win7 my native resolution isnt selectable but 1920x1080p is. In games its mostly limited to 720p except for bad company 2 that will run in 1080p.

The problem in windows is similar to threads ive found about win7 not showing the native resolution of my monitor but the suggested fix of using old drivers or making a custom driver in powerstrip hasnt solved it. Ive tried some different nvidia drivers (197.45, 260.89, 280.26) and have installed the latest monitor driver. Ive also formatted, reset the CMOS and tried the other DVI output on the GFX card but do not have a VGA or HMDI adapter to test with. I am primarily looking for solutions based on the z68 chipset as everything was fine prior to installing the new parts.

My build is:

(new parts)
i5 2500k
Asus p8z68-v - BIOS 0606 (latest avail on asus site)
8gb DDR3 Vengenace LP

(old parts)
Win7 Ultimate
XFX Geforce GTX260 (connected VIA DVI + using 280.26 drivers)
Neovo H-W22 (native resolution 1680x1050)
SB X-Fi Xtreme Audio

*UPDATE*

I found a VGA-VGA cable and used a DVI adapter to test and its working (bios is full screen and 1680x1050 is max res with all lower res's shown) but ofc the quality of the VGA connection isnt as good. I also noticed the adapter has more pins than the DVI-DVI cable i was using.

Can any1 explain this plz?

What cables do i need for a higher quality connection without messing up the supported resolutions again?
