Why are so many graphics cards favouring non blower designs? Surely throwing all the hot air out the back is the best method of cooling?

Non blower designs cool the card better than blowers as more fans means more airflow directed at the card. They then rely on other fans in the case to extract the air.
Blower designs are cheaper and often sold cheaper as they know watercool fans will take them and offer a more affordable choice to others. Also they are good for SFF PC's.

Non blower fans also its often all about the bling (look)

Usually blowers can't quiet keep the temps in check for the gpu itself as much as open air designs like your strix etc can. These days most the gpus will boost performance based on power and thermal headroom so those designs which expel heat into the case are more capable at cooling the gpu usually.

It's not often there is a problem with most cases in removing heat from the pc via normal opening / case fans.
