We have a laminate worktop and one of the joints is a flat joint one worktop to another.
It hasn't been matched very well and one piece of worktop sits proud of the other.
The worktop has now ever so slightly blown with water ingress.

Can it be fixed without replacing it?

You can sand off flat, then cut a new piece of laminate to size, probably more than 1 piece and stick down with contact adhesive
Put new joints away from old worktop joints

TBH it is very fiddly and probably better to get new worktops but it is an option

Cut the blown laminate, remove, dig out the blown wood, fill with joint epoxy or colourfill or similar.

Its not hugely noticeable at the minute, but given it's close proximity to the sink it will get worse.

I did use colourfil on it when we first moved in, I obviously didn't do a great job of it though :(

We have covered the join on the joint nearest the sink with...Don`t laugh
Sellotape :D
It has worked for over 5 years now only needing changing about once a year,`nearly`invisible when first applied
Not a permanent fix but it has stopped the damage getting any worse
