I like mine in muffins with the saltiest butter I can find. If there are some olives on the side then even better.

It looks like your egg cracked whilst it was cooking. Which results in some of the egg squirting out, which in turn leaves a large void inside the egg that gets filled with air or water. This can result in the yolk being visible like we see in your picture.
