bonfire night lighting advice

i'm looking for some technical advice, and don't worry, this isn't about fireworks!
I went out with my family on nov 4th in wilmslow for some bonfire/fireworks fun and I took my 350D and my 50mm 1.4
I'm really pleased with the performance of the lens but I had some real problems metering correctly
I didn't want to use any flash so I had to be careful about shadows without fill flash but the camera kept metering badly
I'll show you what I mean
this is how the shots came out almost natively
ExposureTime - 1/6 seconds
FNumber - 2.50
ExposureProgram - Aperture priority
ISOSpeedRatings - 1600
ShutterSpeedValue - 1/6 seconds
ApertureValue - F 2.50
ExposureBiasValue - -0.67
MeteringMode - Multi-segment
Flash - Not fired, compulsory flash mode
FocalLength - 50 mm
ExposureMode - Auto
WhiteBalance - Auto
Flash mode - Not fired
Sequence mode - Single or Timer
Focus mode - One-Shot
Image size - Large
Contrast - High , +1
Saturation - High , +1
Sharpness - High , +1
Metering mode - Evaluative
Exposure mode - Av-priority
Focal length - 50 - 50 mm (1 mm)
Flash activity - Not fired
and this was with exposure dialed down
I got a few shots like these
with no flash but I had to dial down to the exposure bias to -2.0 at one point
is it that in those lighting conditions the camera just can't keep up with the fluctuating light or should I be using spot metering or something in particular
