Bootable external hard drive for OS..?

So I've done it with USB in the past but I need to install OS on 2 separate SSDS and can't seem to find any USB at hand.
Although I've got a 1tb external HD, don't wanna waste time but would it work to make it bootable through it with some tinkering ?

Yes you can do it with free software called WinToUSB to make bootable Windows USB HDD/SSD.

I've installed internally and put in a caddy after and it still booted before. It refused to install big windows updates.

I mean, I want to install it on a SDD, but choose the external HD to boot to install

Do you mean you want to install from a bootable USB disk?
Use the windows image creation tool and tell it to put the installer on your USB disk, then tell your BIOS to boot from it. I use a 16gb flash stick. They're really cheap for that size now.
