I was just going to suggest something like this, you don't want to do much to white fish.

A few ingredients, wrap it in foil then bung it in the oven for 20 mins. perfect.

Sea bream needs absolutely bugger all doing to it at all. It's got such a delicate flavour most additional flavours will over power it imo.

Recipe looks good though, how did it turn out Gilly?

In the end I cooked it under the grill and cooked it with garlic and rosemary.

I had it on a bed of lettuce, tomatoe and cucumber.

Not sure if i'd recomed cooking as above, steamed might be nice.
On a serious note the fish sticky has a nice recipe for evenolpe, which woud of suuited and a pesto recipe, tried both (with bass fiets) they are loverly.
