Bubble and Squeak, simple recipe

Does anyone have one? Hopefully as simple as possible, maybe potato + cabbage. I've found on on the internet that seems good. Anyone else got any modifications? Am going to serve with a poached egg and maybe fried bacon.

Day old boiled spuds, white cabbage, greens, pepper.

Mash it all together, good glug of oil in a heavy based frying pan. If you can, shape it into cakes about the size of a CD. Makes it easier to flip.

Remember, the more crispy brown bits, the better. Oh and the more brown sauce, the better.

Mash your leftovers up, fry in a heavy pan until crispy on the outside, turn repeat.
Serve with egg and home-made thick chips.

Sprinkle with malt vinegar (optional).
