Budget gaming PC build using an old desktop as a base, a few questions on bits to upgrade

I am building, or rather upgrading a spare PC (running windows 11) in my house with the aim of creating a budget gaming PC for one of my children.

I have a budget of around £400 for new bits. I need a bit of advice on a few different things. Currently the PC has

  • CPU - Intel Core i7-9700K - Keep
  • Hard drive - SanDisk SSD PLUS 240 GB - upgrade
  • Mobo - Gigabyte Z390 UD Intel Z390 (Socket 1151) DDR4 - Keep
  • GPU - Asus Nvidia geforce gt 1030 2gb Graphics Card - Upgrade
  • RAM - Corsair Vengeance LPX Black 16GB (2x8GB) 3200 - Keep
  • CASE - Be quiet Pure Base 500 Midi Tower Case - Black - Keep
  • Cooling - Corsair Hydro Series H115i PRO RGB Performance Liquid Cooler - Keep
  • PSU - Pure Power 11 300W 80 Plus Bronze - Upgrade
  • Monitor - Dell 2721 DGF - Keep
My list of things to upgrade is as follows
  • GPU - I need a better GPU, but its likely to be used for minecraft, roblox and planet zoo at 2560x1440. I was thinking of a Radeon 7600XT which seem to be around £300, the thinking being it has 12gb ram. Is this sensible?
  • Hard drive - Upgrade to a 1tb NVME. A Crucial P3 PLUS 1TB Nvme is around £60. Is this worth doing? I would need to clone/copy across my current windows 11 install.
  • PSU - I think the PC will need more thant 300w, so I can see a be quiet! SYSTEM POWER 10 750W 80 Plus Bronze Power Supply for £65

Are these upgrades sensible and sufficient? Any other tips or suggestions?

7600 XT is a huge upgrade on the GT 1030, but it is a poor performer for the money when you get the superior 6750 XT for that.

One of the reasons is that AMD didn't increase the bus width with the memory capacity, so unfortunately it performs less well at higher resolutions than you might think.

RE: the SSD, I'd just add the drive for storage, no need to replace the OS drive.
