We have some old laptops that we want to use to connect to our terminal servers at work.

Most of them are not man enough to deal with XP, so we were looking at chucking on a thin client only OS.

I am not after a full linux environment, just something to boot the laptop, the user clicks connect and they are on the TS.

I also want something that is easy to install eg chuck the CD and go, and also must cater for a decent set of wireless cards

So anything that has an RDP client then? Try playing around with Ubuntu, Fedora, etc until you find one you like.

Ubuntu would be my shout, just for simplicity reasons. Then get it automatically open an RDP client on boot and connect to the IP of your terminal server.

Simples.
 
DSL will do most of what you ask and can be run from USB stick for testing and you can add you own drivers to it as needed.
