Build a new PC ready for new RTX/AMD graphics & CPU, but using last gen CPU/GPU for now

Advice is VERY welcome...

I want to build a new PC with my son for 1440p gaming ready for when we can get hold of the latest graphics cards, such as RTX3070 (or 3060Ti) or AMD 6800 (XT).

CPU of choice would probably be an AMD 5600X.

Bearing in mind we are very unlikely to get one of these processors or graphics cards any time soon (believe me I’ve tried!), and don’t want to pay the overinflated scalper prices. We would like to build a system compatible ready to accept these components.

We are thinking the best bet might be to get a used CPU & GPU for now, such as AMD 3600 & 2060 Super. Take the performance hit for a few months until the latest GPU/CPU become more readily available and then just swap them out & sell the old ones.

Budget is largely VFM based on performance/£.

So far have bought:-
Iiyama G-master GB3466WQSU-B1curved 1440p 144Hz monitor £379
Razer Blackwidow keyboard £75
Logitech G502 wired mouse £30
Saharagaming C500B ATX CASE & 4 RGB fans £42

What are your thoughts on the rest?

Was thinking along the lines of:-

B550 motherboard
750W Gold PSU
1TB NVME SSD
16GB (2 x 8GB) DDR4-3600 CL16 RAM

please help!
 
The 2080 fell through, but got a used RTX3070 FE instead

Never even got a sniff of a 3060ti yesterday, despite having about 8 devices logged in on various sites.

Also added:-
1TB WD SN550
Swapped the MSI Tomahawk for a MSI Gaming Edge WIFI for a fiver less.
