[Build Help] Dedicated Video Editing Build, Limited Gaming

I'm new to custom PC's, so just want to make sure I'm heading in the right direction before deciding to order.

This PC will almost exclusively be used for video editing, 1080p/60fps level of video. Likely running Cyberlink PowerDirector for 6 hour sessions or more with background apps open. Gaming will be rare, the occasional Battlefield, Skyrim, MMORPG's depending on whether or not I'm into that sort of thing at that moment in time, so not looking for Ultra settings during gaming.

As such, graphics are not particularly a high priority, though it still needs to be able to effectively run the video editing software + add-ons that comes with (does this even effect it?! I'm telling you, I really am new!). High settings as opposed to Ultra when I do play, but a solid FPS is preferred over graphics - 50+ fps.

Budget is around £1,100 really, though a little over is fine

RAM: Kingston HyperX Savage 16GB 2400Mhz

GPU: Radeon RX 470 Nitro+ OC 8GB
PSU: Cougar GX V3 600W Modular (Gold Rated)

**Price for this build so far (with extras):** ~£1,100

Build 2
CPU: Intel Core i7-6700K 4.0GHz (Skylake)
Mobo: Gigabyte Z170
RAM: Team Group Elite 16GB 2400Mhz
SSD: Samsung 750 EVO 250GB
HD: Seagate 2TB 7200rpm SATA
GPU: Radeon RX 470 Nitro+ OC 8GB
PSU: 600W (Not modular, Bronze rated)

Both will have a CPU Cooler, undecided which one yet however. Corsair case is a likely, probably 400C.

**Price for this build so far (with extras):** ~£1,150

I understand that the general consensus is that Intel has the better CPU (at least, their architecture is better), however if I'm only looking to be video editing with this machine, will the AMD unit perform the same, if not better due to the extra cores? Is Intel worth the extra money considering the downgrades I have to take in other areas to keep the price competitive? What about the future, will the AMD based system make it harder for me to upgrade if required later on, such as when 4k videos become the norm? What about the GPU?
If there's any information you can give to help sway me one way or the other, I'd really appreciate it! Even if it's just an opinion for what you would choose. Thanks!
