Aside from power bank (my Anker 24,000mAh 130W is brilliant) & multiple usb-c cables (Inui & Ugreen 60W are decent - don't forget a couple of 3m long ones, for when sockets are miles from the bed)..
...Don't forget a VPN - we use Windscribe (bought a lifetime Pro subscription donkey's years ago). Allows us to access iPlayer, UK Netflix (and US/CA version when home), etc.
We have a couple of the Ugreen GaN 65W chargers, plus a decent global travel adapter - we also take a UK 4 plug extension socket, so no need for multiple adapters: wife can plug hair straighteners in whilst kids are charging devices.
I swapped out our 4G MiFi device for the GL.iNet Slate 7, with a Ugreen USB-C dongle that has ethernet & 4 USB 3 ports on - the dongle connects the router to my Pixel 9 Pro XL (with local e-sim for data) if the hotel doesn't have an ethernet connection for the Slate 7. I've tried just running a hotspot on the phone, but it doesn't cope well with 3 data-hungry kids abusing it.
We sometimes take the Switch with us, although we now mainly use Artemis/Apollo on our tablets, so provided WiFi is decent, we can stream from our PCs at home, and PXPlay to access the PS5 (if WiFi isn't fast enough to stream the PC, it's usually enough to stream the less demanding PS5). I've also paid for a Geforce Now subscription if Artemis doesn't work well - which has been great.
Each child has their own controller: Gullikit King Kong 3 Max - come with a handy hardshell case to protect it. Can switch between PS/Android/Switch/Xbox layout easily.
We also take the Firestick with us (with Windscribe/Artemis/PXPlay on) to plug into the hotel TV, with the cable that plugs into the TV's usb port (it's usually got enough amps to power it, if the TV is relatively up-to-date).
It sounds like all we do is travel to just hide in the hotel and play online - not the case, but with my health and the kid's autism, sometimes we need a respite day with a bit of "normal", and gaming helps with that. Handy if the weather is bad, too (not unusual when we're in Canada or Thailand).
