Butterflied Chicken Breast

I am planning butterflied chicken breast tonight but am looking for something different to do with it.

Was just going rub with salt/oil and grill or griddle (mind not made up), but was thinking there must be more I can do? Any ideas as to what to use for flavours. Planning to have it with garlic roast potatoes and veg (undecided).

Couple of good ideas there.

This is the plan :

Gonna butterfly breast and then oil with cajun spice and griddle with mushrooms, bacon, garlic roast potatoes and cauliflower (with a little cheese sauce).

Would be be best to leave it for 30 mins once oiled before griddling ?
 
Lemon and pepper is my favourite. Otherwise, rub with a little olive oil mixed with finely chopped fresh basil and garlic, though it works better to make a pocket and rub inside to avoid burning.
 
Ended up doing it the most simple way - butterflied it and then run olive oil and coated it with cajun spices. Eight minutes or so either side under the grill - bliss. Forgot to do the bacon & mushrooms, but at least that's brekkie sorted !
 
Nice just brushed with some bbq sauce, then proper saute potatoes and sweetcorn. Simple and tasty.
