Butternut squash - ideas for a quick and simple snack/meal

Evening,

Just realised I have a squash in the fridge which I need to use. Aside from knocking together a salad and chucking some roast butternut squash in there, what other things can you suggest?

Butternuts will literally last for months as long as they have no damage :)

I find they are no where near as nice after a week or so - they develop a stringy texture.


Roast butternut squash, chorizo and red onion risotto :) A trademark dish of the good lady of Maison Jingo, and a delicious dish well worth trying :D

You must be keeping them in the wrong place then, or have had a damaged one. They are best at room temp in the open air (no idea why). I used one a few months which was pretty much 12 months old, was as sweet and fresh as one bought new.

Also bear in mind, that just like carrots, pots etc, butternuts are probably at least a few weeks old already when you buy em :)

cut into cubes, roast in the oven with some shallots and garlic cloves -all sprinkled with some brown sugar.

Slow roast for about 90 mins and then mix with some nice pasta and good quality olive oil for a nice pasta dish.

I think it's something to do with the general high temperature of our house :)

Interesting though that such a tough beasty has such delicious flesh! Mmmmm BNS flesh.... :D
 
Roast with chunks of red onion, courgette, rosemary, thyme & garlic. After 15 mins or so whack some pork chops or chicken on top and give it another 25 mins. Cous cous on the side. Nosh.

Or cut into wedges & roast for a snacky snack.
