Hi there I game at 1080p and was wondering if having 2 GTX580s is worth it? will any game stress more than one card can handle or will having the 2 cards make things smoother by taking some stress off one card?

At 1080p @60hz nothing is really going to stress it on anything but the very top settings with AA/AF cranked up. Having two cards is only really an advantage when you are at higher res or higher screen refresh rate.

Most benchmarks have either seen the processor be the bottleneck with SLI. Also most sites report that the advantage doesn't kick in until you have silly resolution sizes, talking duel screen or TV size stuff.

Most games should run fine with a single GTX580. For some games a pair of GTX580 still struggle:

Metro 2033: cannot maintain a smooth playthrough. Sometimes even lower than 30fps.
Shogun 2: GTX580 SLI performance slower than 6950 Crossfire (because it's an AMD's game), and GTX580 SLI gets horrible lag spikes upon campaign map (possibly driver issue?).
The Witcher 2: if you enable Ubersampling, GTX580 SLI cannot produce playable fps.
