Can anyone recommend two case fans?

Can anyone recommend me two 120mm case fans.

Motherboard is the Asus Maximus VII Ranger which has pwm headers.

I have two 3 pin Corsair fans lurking, could I run these off the pwm headers and still control their speed?

If I could I could just reuse those.

Yep, you can use the corsairs fine. The chassis fan headers are indeed 4 pin, but theyre not PWM headers. The only true PWM headers are the cpu and cpu optional fan ones. I had a mix of sp's and af's from corsair, (now use a manual controller) running on the chassis fan headers, you can use the bios fan profiles, or use fan expert in the asus ai suite software to control them.

Are the Chassis fans definitely not PWM? How can you tell the difference?

Nope, no PWM on the chassis headers. Voltage control only. Read it on a few forums including the official Asus Rog one.
