I've ordered a doofer ,(sorry for technical terms) that takes info from the car that I can see on my phone, that gives me some idea of how I'm driving, harsh breaking, acceleration etc. The TomTom Curfer.

But it uses Bluetooth. Can I have that connected and still use the cars Bluetooth for calls and Spotify?

Depends on the phone - some devices support multiple connections

Looks my phone (pixel 4) will do it fine. In stuck in work until 2am so won't get to have a play tonight :(

If you're on Android P or above, with a decent phone you can have upto 5 Bluetooth devices connected simultaneously.
