Can I put 6 dual channel modules into a tripple channel mobo?

The way I understand it, memory modules aren't explicitly dual channel or triple channel, so I should be able to get 3 packs of 2x 4GB rather than 2 packs of 3x 4GB for my triple channel mobo, and they'll work as two triple channel sets, right? Any disadvantage to doing this?

It's a Gigabyte GA-X58A-UD3R btw

It should work fine, but...

Each kit can be made with various parts at any given time. There's 9 IC manufacturers, each with multiple ICs, and even ICs from the same batch may not play well with each other. Then there's multiple PCBs that can be used.
Add that all together and that means that 2 kits that came out of the factory one right after another may not play well with each other.

Also, buying them at the same time means nothing, as you could be buying memory made at different times (not that it would make a difference). (Source)
