Can I run Snow Leopard from an external hard drive?

I've got an old Mac Mini and the internal hard drive is small and slow.

It's got a firewire port however...

If I was to hook up a speedy external 3.5" HDD in a firewire enclosure, would I be able to boot from the 3.5" hard drive at all?

Indeed you can, you need to make sure that it's formatted with a GUID Partition Table though, don't believe it will boot otherwise.

Nice, thanks, I've got a few newish 3.5" drives kicking around so once I've ordered a decent firewire enclosure for it I should be good to go. Thanks.

You can also boot from USB.
