I have a Asus P5B Deluxe with a E6400 oc to 3.2 - which is nice! :p

Couple of questions:

CPUZ Shows Core Speed as 2400Mhz x6 and occasionally goes to 3200 x8. Is this normal?

What CPU will my board take upto? And is it worth upgrading the CPU considering the oc I have?

Thanks

That's Intel Speedstep, no real reason to turn it off as it consumes less power by dropping the multiplier to 6x and bumping it back up to 8x when you need it. If you really want to disable it, disable C1E/EIST in the BIOS. Your motherboard supports 45nm chips so Penryn will work fine. And no don't upgrade now, wait until Penryn is out and you could get a Q9450 if you can afford it.
