Can I use Dual Channel RAM?

I can't remember from the time but is Triple Channel RAM pretty irrelevant?

I'm not exactly running out of memory but 16GB of fast ram is so cheap these days, I'm thinking - why not?

With the i7 920 Socket 1366 - it makes no difference using triple channel does it? It was a bit of a flop, no?
 
Not sure what Mobo you have as there is

GA-X58A-UD3R (has 6 ram sockets)
GA-EX58-UD3R (has 4 ram sockets) my work PC I'm on now.

Both can use Dual Channel, you will lose some bandwidth, but I doubt you'll notice.

Check the manual for the correct sockets to use. According to the manual on the EX58-UD3R it will run in 3 channel mode with 4 sticks of ram, if I'm understanding it correctly.

It looks like 4GB is the most you can have per stick.
 
You can use whatever ddr3 memory you want, its the motherboard which decides what channel mode is used, not what is stated on the kits. I'm not sure why you think triple channel was a flop, the only reason triple channel kits are not sold now is because there are no triple channel motherboards in the current lineup.

According to the manual for your motherboard, installing 4 sticks of memory will still let it run in triple channel mode. So you could buy either a quad channel kit or 2 dual channel kits.
