...an Nividia card with a Asus M3A32-MVP Deluxe/Wi-Fi AMD 790FX (Socket AM2+) Motherboard? or does it have to be an ATI card?

Am having a Phenom Quad Core CPU and was wanting the latest 790FX chipset, however i really want an Nvidia card!

No. As you said its a crossfire board so it wont support an SLI config.

As above, SLi will only work on Nvidia chipset motherboards, but a single Nvidia card will work fine in a crossfire board, running like that here.
