3600MHz is the best for general compatibility with the 3rd Gen Ryzen CPUs as most CPUs can reach 1800MHz IF (best performance is when you keep the IF at a ratio of 1:1 with the RAM)

Actually DIMMs don't know anything about whole memory channel thing.
Besides good clock speed you'll want latencies to be good instead of slow and sluggish.
Latency is measured in clock pulses, so bigger numbers are worser in that.
