Can you pair 2 bluetooth headsets with the same phone at the same time?

In particular the omnia which I'm going to be getting in a few days?

I'm trying to think of a all in one solution for a motorbike gps and mp3 player for 2 people without spending the earth, and this would be a bit better than an FM transmitter

If that is possible is there software to make them act like an intercom as well? Got a feeling I'm definitely asking to much now tho .

No. You can pair more then one BT device at once, so long as they use different profiles (concurrent BT connections). In theory you could pair a headset via the headset profile and one by the handsfree profile, but I honestly wouldn't bank on it working.
I'd suggest looking at http://www.intaride.com/
they make specialist bike comms kit, thats likely to work a lot better. I think your asking a lot from the poor Omnia.

Ta, intercom not a huge issue tbh the main thing I was after is sat nav directions and music for 2, which I can do with an FM transmitter.
