Can you record off of Sky?

yes you can, in the same way that you can record off any AV device

I've recently acquired a Pioneer DVR-530HS DVD Recorder with 160Gb HDD. It can control your Sky box via an IR sender, and works brilliantly for me. A great bit of kit IMHO.

yup just scart out from the sky box into your DVDr!
