Can you use a Linux Live CD/DVD to recover windows data

If so how when I tried all the windows stuff wasn't visible and how can you copy it to DVD

Yes, you can (and I have).

First things first... can you at least see the Windows partition from Linux? Have you mounted it - only needs to be mounted in read-only mode, but it will need to be mounted.

Knoppix should automatically mount any partitions it finds.
