Can you use a twin throttle HOTAS for a single engine sim?

Hi, looking at getting a Winwing HOTAS, specifically the F18 setup to fly, F18's! in DCS. I see the HOTAS has twin throttle handles, and the F18 has 2 engines. So far so clear! Can i then use though the same HOTAS for an F16 say, which only has one engine? I know you can lock the 2 handles together, but is there any software fiddling to tell DCS or any other flight sim that where once the HOTAS sent (i presume?) a signal out per throttle, now i lock them together for a single engine sim, i want to just control one engine using i guess both throttle handles linked together? (sorry if this is a bit rambling!)
 
From experience it's also worth checking the other throttle (along with the other axis controls) don't get automatically bound to something like the rudder  before you try to take off
