I'm want to add a third monitor to my system to use as a document viewer as i have one spare that can flip to portrait mode. was planning on just adding the cheapest £10-20ish pci/pci-e card that i could find purely for outputting the signal to that monitor. It's just struck me that i might have to use a card that meets vista standards to run aero properly. Is this the case or would the work be offloaded onto my main graphics card then just sent out via the cheapo?

Ideally, if i do need one that is up to vista standards, then it would be nvidia and not require any additional power connectors as all mine are used up on the 280.
 
Just get the cheapest DX9 PCI-E graphics card you can get. As you said it would have to be an nvidia one so it works with the 280 and vista. I think a low 8 or 9 series would be your best option.
