I seem to recall they had to release the retail version of the game with zombies and you had to patch the humans back in?

Different countries the retail was humans & red. Zombies / green blood in some (including UK)

I seem to recall they put the blood and guts back in the UK version after the BBFC allowed an appeal? I saw this on youtube this morning (Rees Rambles) and it looked alright, albeit lacking the same over-the-top cartoon violence thing.
