Carolina Sweet potato Soup (hat tipped to DcD)

A little while ago I made DcD's Carolina pulled pork, which by the way was amazing!

His recipe made quite a lot of the rub so I've been using it for all sorts, including to sprinkle on things, it's that good!

Anyway, I'm currently going through a soup phase and fancied something different from my normal spicy carrot, parsnip, root veg etc.

I got me a few sweet potatos, peeled and cut into large chunks. Tossed them in a little olive oil and then again in a couple of tablespoons of the carolina dry rub. Whacked them in a roasting tin and then into the oven on high (no idea on temp). Once they were nice and soft with lovely sweet chewey caramalised edges, into the blender they went and covered with chicken stock. Blended until smooth.

This is the nicest tastiest soup I've ever had, never mind made myself. Sweet, spicy, thick and filling... yummy :)

Soup sounds great, shall definitely try this.
 
Here's the dry rub...

2 tablespoons salt
2 tablespoons sugar
1 handful brown sugar
2 tablespoons ground cumin
3 tablespoons chili powder
2 tablespoons freshly ground black pepper
2 tablespoon cayenne pepper
8 tablespoons paprika
