Use shielded CAT5 if you care about security and don't make it easily accessible to people/animals. :)

So there is no kind of startrek device which can sniff the info from the cable If the cable is at head hight ?

There's special cat5 for external use which is what I used. Think it's encased in a more hard wearing outer sheath so hopefully it won't start to crack when the sun finally comes out :)

There's probably something, but you'd have to be an attractive target first for someone to bother surely?
 
Should be fine, if it's not just going up a wall or something though, consider some armoured tubing to run the cable through just incase.
 
wear-and-tear wise it ought to be fine. special "outdoor" cable would be better though.

from the consideration of data safety? no, wired cables are as secure as an armoured train in comparison to any type of wireless.

Ethernet cables emit very little EM in the first place, and because they're twisted, after more than about 1cm away from the cable all the EM would jumble together.

i'd estimate that harvesting data from even a humble CAT.5 cable without physically connecting a device to the conductors themselves is almost impossible.
 
Like NathanE, I had a cable running from my lounge on the 2nd floor upto one of the bedrooms on the 3rd floor. It was put there last April and is still running at GigE speed without any hitches.
