Hi,
Look up the Geovision GV-250
PCI card, different models from 2 - 16 cameras starting around £100
records at approx 16fps across the cameras which is plenty and has excellent motion sensing so can only records when it needs to.
Fantastic software. Stay away from the cheapo cards from auction sites. Although they record the software is poor and tends to crash the host regularly. Also don't buy a Geovision card from auction unless you are very sure of the origin. There are plenty of fakes which don't run the latest software.
Cameras ... something with a Sony CCD 1/3 is usually fine though you need to think about lenses and detail. Avoid the really high power IR illumination or you'll just see reflected whiteness in the dark. Cameras are upwards of £70 for a servicable one.
If you pay less, you get less.
