I am going to get two 6970s for my new rig and will be using the the Asrock Z68 Extreme4 mobo.

I wanted to confirm how far apart the waterblocks are, will I need a dual or triple slot VID fitting to connect the two waterblocks? (looks cleaner than two barbs with tubing between)

It depends on the spacing. If you have them in the PSI-E slots next to eachother, then a dual slot will be what you are looking for.

BTW, what will you be doing with your 8800GTX block?

I have seen there are universal kits that can be used for single to triple size gaps so I think its safest to get one of these kits.

With the 8800GTX block my mate was going to sell it (he is buying current PC minus watercooling, but was including GPU and CPU block). Are you looking for one? Its an EK copper block.

You can get that EK sli/crossfire adapter, that's what I will be getting if I pull the trigger on another 580 :)
