Does anyone know how to go about changing the local dhcp / ip range?

Customer has one but the dhcp range it is giving out 192.168.3.XXX conflicts and we need to change it to ideally 192.168.4.XXX

Had a look at settings of the dongle and online but not getting anywhere fast. :(

Depending on what the device is you could try connecting to http://m.home (admin / admin).

You should find a DHCP section.

Looked allover the web interface, to say it's cutdown is a understatement. Only thing you can do on this one is set a profile up for the carrier settings.

Dongle is a Huawei E3372

I've not got mine with me at the minute but there's an app for Huawei dongles that you can install on android/iOS that gives access to some settings. Might be worth a try, it's call HiLink.

As that's a USB only device why would it be handling DHCP? I would have expected it to pass the WAN IP through to the connected device.

I was assuming it was a wireless capable device that would support multiple clients which would need to have NAT and DHCP.

Any chance it's the device the dongle is connected to that needs reconfiguring?
