Hey, I want VLC to handle all my media content, but no matter how many times I right click on a file, open as and choose the application (complete with the always tickbox) then I click on another .avi and quicktime pops up.

Is there a system wide place I can just say "AVI, MPEG, WMV etc... VLC" ?

Right click on any avi file. Then click get info. Goto the "open with tab". Select VLC then click change all.

The wonders of OS X and it's per-file file associations :) There's an application called either "I love you more" or "I like you more" that should be able to sort you out. I had the same problem with existing ZIP files being associated with an uninstalled copy of stuffit and that app let me force everything to open with my new app.

What I really like is the ability to have all my Photoshop documents open in Preview when I double-click them, except one which I'm currently working on which I set to open in Photoshop. It's a real help.

RCDefaultApp gives you a preference pane in system preferences where you can change the default app for any file type, mime setting, etc. Should be what you're looking for.
