Changing domains

Looking for some advice.

I have a network with 50PC's connected to a local network. (Just one Domain controller)
We are moving to a new server with a new local domain and killing the old one off. Do I need to re image all the client PC's or is it enough to logo on to them move them to a workgroup then rejoin them to the new domain?

You can just leave their current domain, join a workgroup, reboot and then add them to the new domain. No need for re-imaging.

Each user will get a new profile, so will need drives, printers etc re-mapping (though much of this can be via GPO). Users which store vast amounts of work on their desktop will need this copying.

What domain function level are you currently at?
You could use something like active directory migration tools and gpo management to seemlessly migrate to a new domain with little to no impact to the end user, there will be plenty of white papers on how to do this on the MS site.
