Changing Water for a cooler

I've decided to go with a cooler than my water based cooler mainly due to expense and time. I can sell my water cooler an make some cash which will fund my upgrades.
Now when I take off the water system and replace with the air cooler I need to apply thermal paste? How much and how do I take off the old paste.
 
I use lint free cloth and rubbing/cleaning alcohol to remove the old paste.

As for how much, it depends on the TIM that you are using - the usual is about the size of a grain of rice placed in the centre of the die, but it can vary depending on the TIM being used.
