Changing web hosting providers

I'm sorry the title wasn't really long enough to provide a detailed question.

I am considering moving from my current webhosts, who I do not have my domain name with (I simply point it to their servers). I use my site for email mostly at the moment, but am considering switching my webhost.

Lets assume I go with 1and1.co.uk and I set up the webspace, point the domain name to 1and1.co.uk. Will my email basically pick off as it left off?

As in, [email protected] will now just root through 1and1.co.uk? Never switched hosts before so not certain.

Just use Google Apps' Email because it's going to be miles better than what most web hosts can offer, and it's free.. and you get the Gmail interface, POP3 and IMAP. Win .

or if you really do want to use 1and1 you just update your domain's DNS' MX records to whatever 1and1s are (they will give it you).
